S'more Cupcakes

S'more Cupcakes....they just sound delicious, don't they? 

I had to try them when the recipe was posted on Cookies and Cups Blog here. I of course put my own little twist in this. 

The recipe called for chocolate - I used for white chocolate. Here's the nice thick layer of chocolate covering the cupcake. Instead of a chocolate cupcake I also did a white cupcake. 

Sounded lighter to me and I'm not much of a chocolate fan.

 Can you see the layer of graham cracker crust at the bottom? Yummy.
 And notice the roasted marshmallows on top.

These things weren't that easy to put on the cupcakes! Easy to roast in the oven but then they stick to the parchment paper and getting them off and onto the cupcake was a challenge - very sticky too!
The finished product. Yum. A graham cracker layer crust, white cupcake, white chocolate layer on top and a marshmallow buttercream frosting!
The kids sure enjoyed it last night! And the parents gobbled them right up too! This is a keeper recipe!

Wedding

Going to the chapel and she's gonna get married! 

These were made for a lovely bride to be. Always fun to make cookies for such a wonderful occasion.

I haven't seen the brides wedding ring but I hope it's as big as my cookies, don't you? 



I found a design for these wedding cakes on Etsy here.
The flower bouquets are something I found last year on one of my favorite websites, The Sweet Adventures of Sugarbelle. You can find a wonderful tutorial here. She makes it so easy to try and recreate some of her fabulous cookie designs. She is always an inspiration to me!
For my tuxedo cookies I used a birthday present cookie cutter! Borrowing the idea I found on Ali Bee's Bake Shop. Isn't that clever? Cookie Crazie gave me the idea to use a heart cutter for the bodice of a wedding dress! Another fun idea that I found here.

Crunchers

A bit of a "opps" earlier today....you may have gotten this blog before I had finished it! They've changed the set up of the blogs and I hit the wrong button....so that was just a teaser! Here's the real thing with details. 

I made these "Crunchers" yesterday - a swirl of brown sugar, peanut butter, white chocolate, butterscotch and crackers. These are heaven. I altered the recipe just a bit - adding which chocolate instead of chocolate and only put 2 layers of crackers instead of 3. And I thought they turned out fabulous.

I found the recipe on this website. 
So easy to make, doesn't require any baking in the oven either. This is a little bit of heaven if you are interested. And totally worth all the calories!

Happy Birthday Brady!

Happy Birthday to my big Brother Brady!!!!

I was asked by his adorable wife, Kristen, to make an assortment of sports cookies for my brother's big 5-0 birthday celebration in Dallas. Brady has been in the TV business for many years and knows just about everything about sports, I think!!

So what would be more perfect than sports cookies, right? And of course all Texas teams since that is where he lives!

I had to make 2 batches of these cookies. For some reason my first set turned all splotchy when they dried. Ugg. I couldn't send those to a party so I started over. Don't' worry. Those cookies did find a good home. They were still tasty just didn't look like I wanted them to!

The final product on the right was much better and
I liked the shade of gray more too!

Per a special request, Kristen said that Brady loves cows and needed a dozen of those. Sure thing!

I hadn't decorated a cow before and always like to make a new cookie.

I sent along some special cookies for Brady to enjoy on his own after the party. Loving Batman as a child I thought some of these cookies would be neat.

Sure wish we could be joining Brady at his big Birthday celebration. I know it will be a blast. I will be there in spirit.

Happy Birthday in Purple and Pink

I was busy this week making Birthday cookies for a special 10 year old girl. And of course, just like any girl that age I believe, purple and pink are her favorite colors. I brought out some of my sprinkles and disco dust for these fun little cookies!

What's a birthday party without a sparkly cupcake, right?
And what says little girls more than pretty shoes....

Tiaras.....
fancy dresses....
and purses? I thought they all would be perfect for a little girl party.
And don't forget the fun party cookies - cakes, candles, balloons and party hats!

Chickpea Salad with capers and Roasted Red Peppers


Even though this is not a "sweet", I decided to share with you!

Normally I use these Roasted Red Peppers in a jar whenever I have a recipe that calls for them. But when I decided to cook a Chickpea Salad with Capers and Roasted Red Peppers side dish that I got from the Smitten Kitchen Blog, it gave me a link to try this myself. Sure, why not!I was a bit skeptical as I always am since it seemed to be too easy for me to accomplish! But it really was easy.

Simply cut the red peppers in half and place on a baking sheet.

Put in the oven at broil for about 7 min.

The skins will turn black and bubble as you can see here.Then place in a baggie for 20 min.
After that the skins will come off very easily and you have

wonderful roasted red peppers!

So very pretty!
This side disk was very easy to make and very tasty.

It got all thumbs up from the crowd that had it!
