Peppermint Crunch-Milk Chocolate Chip Cookies

I have gotten on to Pinterest lately and love it! I've found so many fun things to do that I will NEVER have time for it all.

If you aren't familiar with what it is, here is a definition. Pinterest lets you organize and share all the beautiful things you find on the web. People use pinboards to plan their weddings, decorate their homes, and organize their favorite recipes. Best of all, you can browse pinboards created by other people. Browsing pinboards is a fun way to discover new things and get inspiration from people who share your interests.

And boy have I found lots of inspiration for baking all sorts of fun things! The first thing I tried were these Peppermint Crunch-Milk Chocolate Chip Cookies that were "pinned" from Culinary Concoctions by Peabody website here.
These were very easy to eat and very yummy. I was in the mood for a little Christmas taste and found it here! I altered the recipe a bit to my taste -using white chocolate instead of milk chocolate. And making a drop cookie out of it instead of waiting for the dough to firm to cut into nice shapes. Let's just say I don't have the patience to wait!
I had never seen Andes Peppermint Crunch Chips and was glad to find them easily at Target! They made this cookie very tasty.
