Holiday Cooking

So I like to try to expand my baking beyond Sugar cookies...which is not my strong suit. I am still NOT a baker...But Christmas is the perfect time to try so many different things!!! Here is what my platters looked like that I gave away...and yes, you do see some sugar cookies in there! From my Taste of Home Christmas Cookie books here are Peppermint Twist Kisses. I've always wanted to try making these and they were harder for me than I thought! My kisses melted a bit too much when I put them on top of the cookies. Next time I think I need to wait a few minutes before doing that! Candy Cane Cookies from Taste of Home Cookbook. ANOTHER easier said than done cookie for me! Rolling them out wasn't quite as easy as I anticipated. The dough had to be quite cold otherwise it would break apart. These French Christmas cookies from Taste of Home were tasty. Made with graham crackers, walnuts and white chocolate chips. White Chocolate Cherry Shortbread - from Better Homes and Garden. The combination of chocolate and cherries is yummy! Nothing says Christmas like these cookies - Gingersnaps from All Recipes.
And this was cheating..but I wanted to see how it would turn out. I didn't have a recipe for fudge that I wanted to try (now I do for next year thought)....sooo..... I used the Fudge in a box!!! I was not too hopeful once I made it that it was going to taste okay or be soft, but I had no complaints. I do feel a bit guilty thought about making fudge this way! I think these were one of my favorites - Chocolate Crinkles from Glorious Treats This is an idea I got from Pinterest. These Peppermint Stick Marshmallows were easy and fun to make. We used them for our cocoa and coffee as stirrers on Christmas Eve. And why not just put chocolate on spoons for stirrers as well?
THESE are my challenge for the season and I"m a bit frustrated as I'm still trying to figure out how to make my own Fortune Cookies. This was attempt #1. Using a recipe that called for the cookie to be a pie crust. These looked so bad I tossed them.
Then I found this recipe from Alpha Mom. I tried this 2 times....let's just say they are not easy to mold into the actual fortune cookie shape. You can only do a few at a time and your fingers get tad bit burned....My first attempt was not good. Those went in the trash. Bound and determined to get them right, I went with attempt #2. Not to shabby, right???
I was extremely pleased with these I must say. Sure I had done them right finally! Until I brought them out at dessert....I took them out of the Tupperware container and they had turned soft!!!! I was devastated after having worked so hard to get this right...I think I put them away too soon before they were fully hard. The flavor was right on these, but back to square one.

I have plans for another attempt in a few weeks to get these things right!!!

See, many of my baking adventures don't go as planned!! LOL But since my name isn't Martha, I think that's okay!

Happy Baking.
Jen
